  • 2 cups Rice Krispies cereal
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened Make sure it's softened but not melted.
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  • Add in the egg and vanilla extract; mix until fully combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  • Fold in the Rice Krispies cereal and chocolate chips.
  • Drop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.

Baking

  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies taste best when served warm. You can enjoy them on their own or pair them with a glass of milk for a classic combination. For extra crunch, add a pinch of sea salt on top of the cookies before baking. Store in an airtight container at room temperature for up to a week.
