For the Cake

  • 1 box Ritz crackers Use as the base layer
  • 1 cup salted caramel sauce Store-bought or homemade
  • 8 oz cream cheese Allow to sit at room temperature before mixing
  • 1 cup whipped cream Use store-bought or homemade
  • 1/2 cup powdered sugar Adjust based on sweetness preference
  • 1 tsp vanilla extract Adds flavor

Preparation

  • In a mixing bowl, beat cream cheese until smooth, ensuring there are no lumps. This should take about 3-4 minutes with an electric mixer on medium speed.
  • Add powdered sugar and vanilla extract, then mix until well combined and creamy, which should take another 2-3 minutes.
  • Gently fold in the whipped cream until evenly mixed. Be careful not to overmix.

Layering

  • In a baking dish, lay down a layer of Ritz crackers to serve as the base.
  • Spread a layer of the cream cheese mixture over the crackers, then drizzle with salted caramel sauce.
  • Continue layering Ritz crackers, the cream cheese mixture, and caramel sauce until all ingredients are used up, finishing with the cream cheese mixture on top.

Chilling

  • Cover the dish with plastic wrap and chill in the refrigerator for at least 4 hours or until set.
  • Just before serving, drizzle additional salted caramel sauce on top.

Notes

Store leftovers in an airtight container in the refrigerator for 3-5 days. This cake can also be frozen for longer storage. Thaw in the refrigerator overnight before serving.
