  • 2 slices slices of bread Use hearty artisanal or sourdough bread for best results.
  • 2 slices cheese (cheddar or cream cheese) Experiment with different cheeses like pepper jack or gouda.
  • 2-3 pieces jalapeños, roasted and chopped Roast beforehand for quick assembly.
  • 1 tablespoon butter Spread generously on bread for flavor.
  • to taste none Salt and pepper Adjust according to preference.

Optional Garnishes

  • to taste none bacon bits Add for extra flavor and crunch.
  • to taste none cilantro Use fresh cilantro for garnish.

Instructions
 

Preparation

  • Preheat your skillet or frying pan over medium heat for about 3-5 minutes.
  • Spread butter generously on one side of each slice of bread.
  • On the unbuttered side of one slice of bread, layer one slice of cheese, roasted jalapeños, and the second slice of cheese.
  • Top with the second slice of bread, buttered side facing up.

Cooking

  • Carefully place the sandwich in the preheated pan. Cook for 3-4 minutes until golden brown and crispy.
  • Flip the sandwich and cook for the other side until the cheese is melted.

Serving

  • Slice the sandwich diagonally and serve immediately with optional bacon bits and cilantro on top.

Notes

For variety, consider adding a layer of mashed avocado or fig jam. Store leftovers in an airtight container in the fridge for 2-3 days or freeze for up to 2 months.
