  • 3 cups cooked rotisserie chicken, shredded
  • 2 cups cooked pasta Any type of cooked pasta (penne, fusilli, macaroni) can be used.
  • 1 cup cream of chicken soup
  • 1 cup sour cream Greek yogurt can be substituted for a healthier version.
  • 1 cup shredded cheese (cheddar or mozzarella) Feel free to experiment with different types of cheese.
  • 1 cup mixed vegetables (peas, carrots, corn) Frozen or fresh vegetables based on preference.
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • as needed Breadcrumbs (optional, for topping) Sprinkle on top for extra crunch.

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C).
  • In a large bowl, combine the shredded rotisserie chicken, cooked pasta, cream of chicken soup, sour cream, shredded cheese, mixed vegetables, garlic powder, salt, and pepper.
  • Transfer the mixture to a greased casserole dish.
  • If using, sprinkle breadcrumbs on top for extra crunch.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until heated through and bubbly.
  • Let it cool for a few minutes before serving.

Notes

Serve warm right from the oven. Pairs well with a side salad or crusty bread. Leftovers can be stored in the fridge for 3-4 days or frozen for up to two months.
