  • 1 lb sausage (Italian or smoked)
  • 4 cups green cabbage, chopped
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced

Sauce

  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tsp red pepper flakes optional

Preparation

  • Slice the sausage into bite-sized pieces ensuring uniformity for even cooking.
  • Chop the cabbage into thin strips and dice the bell peppers and onion.

Cooking

  • In a large skillet over medium-high heat, add sesame oil and wait for it to shimmer.
  • Add the sliced sausage to the hot skillet and cook for about 5 minutes, stirring occasionally, until browned and crispy.
  • Add the diced onions and minced garlic. Sauté for 2 minutes until the onion is translucent and garlic is fragrant.
  • Incorporate the cabbage and bell peppers and stir-fry for 3-5 minutes until tender yet crisp. Avoid overcrowding the pan.
  • Pour in the low-sodium soy sauce and sprinkle red pepper flakes if using. Toss to coat and cook for an additional 5 minutes.
  • Taste and adjust seasoning as necessary before serving hot.

Notes

Serve hot, garnish with sesame seeds or sliced green onions, and pair with steamed rice or quinoa. For extra spice, drizzle with sriracha.
