Main Ingredients

  • 1 lb 1 lb sausage (Italian or your choice)
  • 1 can (15 oz) 1 can (15 oz) white beans (cannellini or navy)
  • 1 1 onion, diced
  • 2 2 carrots, diced
  • 2 2 celery stalks, diced
  • 3 cloves 3 cloves garlic, minced
  • 4 cups 4 cups chicken or vegetable broth
  • 1 tsp 1 tsp thyme
  • 1 tsp 1 tsp rosemary
  • Salt and pepper to taste
  • 2 tbsp Olive oil

Cooking

  • In a large pot, heat 2 tablespoons of olive oil over medium heat. Allow the oil to shimmer but avoid smoking.
  • Add the 1 lb of sausage to the pot. Break it into smaller pieces with a spatula and cook for 5-7 minutes until browned and cooked through, stirring occasionally.
  • Toss in the diced onion, carrots, and celery. Sauté for about 4-5 minutes until the vegetables are softened and the onion becomes translucent, stirring to ensure even cooking.
  • Stir in 3 cloves of minced garlic and sauté for an additional 1 minute.
  • Add the 15 oz can of white beans and 4 cups of broth to the pot. Sprinkle in 1 tsp thyme, 1 tsp rosemary, and season with salt and pepper to taste.
  • Bring the mixture to a boil. Reduce the heat to a low simmer and cook for 20-30 minutes, allowing the flavors to meld together.
  • Check for seasoning and adjust as needed before serving hot.

Notes

Serve hot, garnished with fresh herbs or grated Parmesan cheese. Store leftovers in airtight containers. Freezes well for up to 3 months.
