  • 1 cup Shredded Cheese Colby Jack or pepper jack recommended.
  • 1/2 cup Mayo Adjust for desired creaminess.
  • 2 tbsp Ketchup Use low-sugar for a healthier option.
  • 1 tbsp Mustard Dijon is a great choice.
  • 1 tbsp Cajun Seasoning Adjust to taste.
  • 1/2 cup Pickles Adds crunch.
  • 1 cup Lettuce Any leafy greens work.

Instructions
 

Preparation

  • Begin by washing and peeling the red potatoes. Cut them into small cubes for quicker cooking and place them in a pot of salted water.
  • Bring it to a boil and cook for about 10-15 minutes until tender. Drain and set aside.
  • In a large skillet, heat a tablespoon of oil over medium heat. Add the chopped onions and cook for about 10-12 minutes, stirring frequently, until they're golden brown and caramelized. Remove them from the skillet and set aside.

Cooking

  • In the same skillet, increase the heat to medium-high. Add the ground beef and season it with Cajun seasoning. Cook for 5-7 minutes, breaking it up with a spatula, until it’s browned and no longer pink.
  • Lower the heat back to medium. Add the cooked potatoes and caramelized onions to the skillet, stirring everything together. Let it cook for another 2-3 minutes to allow the flavors to meld.

Assembly

  • In a serving bowl, layer the lettuce first. Top it with the savory beef and potato mixture.
  • Sprinkle shredded cheese generously over the top, allowing it to melt slightly with the heat.
  • Drizzle mayo, ketchup, and mustard over the cheese. Add pickles for that refreshing crunch and serve warm.

Notes

Store any leftovers in an airtight container in the refrigerator for 3-4 days. Great for meal prep. Can be frozen for up to 3 months.
