  • 1 large onion, sliced

  • 1 teaspoon cumin
  • 1 teaspoon garlic powder

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, combine sliced chicken, bell pepper, onion, olive oil, chili powder, cumin, garlic powder, salt, and pepper. Mix until the chicken and vegetables are well coated.
  • Spread the mixture evenly on a sheet pan.

Cooking

  • Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.

Serving

  • Serve with warm flour tortillas and optional toppings like sour cream, avocado, and salsa.

Notes

Make sure to cut the chicken and vegetables into similar sizes for even cooking. Use a mix of bell peppers for more color and flavor. For added spice, include sliced jalapeños or a pinch of cayenne pepper.
