  • 4 pieces chicken breasts Skinless and boneless
  • 1 pound mixed vegetables Such as broccoli, bell peppers, and carrots

For the Garlic Butter

  • 1/2 cup unsalted butter Melted
  • 4 cloves garlic Minced

Seasoning

  • 1 teaspoon paprika

Garnish

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a small saucepan over medium heat, melt the unsalted butter. Add the minced garlic and cook for about 1 minute until fragrant.
  • On a large sheet pan, place the chicken breasts and the mixed vegetables.
  • Drizzle the melted garlic butter over both the chicken and the vegetables.

Cooking

  • Season with salt, pepper, and paprika. Toss everything together to coat evenly.
  • Bake in the preheated oven for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are tender.
  • Remove from the oven and garnish with fresh parsley before serving.

Notes

For a quick meal prep, chop vegetables the night before. You can customize the vegetables based on what you have available.
