  • 2 pounds baby potatoes, halved can substitute regular potatoes, cut into small pieces
  • 2 tablespoons olive oil for roasting
  • 1 teaspoon garlic powder for seasoning
  • 1 teaspoon paprika for seasoning
  • to taste salt and pepper to enhance flavor

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, toss the halved potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  • Arrange the seasoned potatoes on a sheet pan.
  • Season the pork chops with salt, pepper, and additional spices if desired.
  • Place the pork chops on the sheet pan with the potatoes.

Cooking

  • Roast in the preheated oven for 25-30 minutes, or until the pork chops are cooked through and the potatoes are crispy.
  • Garnish with fresh herbs before serving.

Notes

For extra crispy potatoes, make sure they are spread out in a single layer on the sheet pan. You can marinate the pork chops for a few hours before cooking to enhance their flavor. Experiment with different seasonings like Italian herbs or lemon zest for a twist on the dish. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
