Ingredients
  

For the shrimp

  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

For assembling

  • 8 small corn or flour tortillas
  • 1 cup shredded cabbage
  • 1/2 cup diced tomatoes
  • 1 avocado, sliced
  • Fresh lime wedges
  • Cilantro, for garnish

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, combine shrimp, olive oil, chili powder, cumin, garlic powder, salt, and pepper. Mix well.
  • Spread the shrimp mixture in a single layer on a sheet pan.

Cooking

  • Roast in the preheated oven for about 8-10 minutes, or until shrimp are pink and cooked through.

Serving

  • While shrimp are roasting, warm the tortillas in a dry skillet over medium heat.
  • Assemble tacos by placing shrimp on tortillas, then topping with cabbage, tomatoes, avocado, cilantro, and a squeeze of lime juice.
  • Serve immediately.

Notes

Make sure the shrimp are spread out in a single layer on the pan to cook evenly. For a spicier kick, add some diced jalapeños or a dash of hot sauce to the shrimp mixture. Use fresh lime juice for the best flavor and a zesty taste. Feel free to customize the toppings based on your preference. Corn, radishes, or your favorite salsa can be great additions.
