  • 1 lb ground beef (or lamb) Can substitute with ground turkey or chicken for a lighter option.
  • 2 cups mashed potatoes Make them creamy by mixing in some butter and milk.
  • 1 onion, chopped
  • 2 carrots, diced Frozen peas and carrots can be used directly without thawing.
  • 1 cup peas Frozen peas can be used.
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 cup cheddar cheese, shredded
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Preparation and Cooking

  • Preheat the oven to 400°F (200°C).
  • In a skillet, heat olive oil over medium heat. Add onions and carrots, and sauté until softened.
  • Add ground beef (or lamb) and cook until browned. Stir in tomato paste and cook for another minute.
  • Pour in beef broth and add peas. Season with salt and pepper. Simmer for 5-10 minutes.
  • Transfer the meat mixture to a baking dish and spread evenly.
  • Top with mashed potatoes, spreading to cover the meat mixture.
  • Sprinkle shredded cheese on top.
  • Bake in the preheated oven for 25-30 minutes or until the top is golden and bubbly.
  • Let cool slightly before serving.

Notes

Shepherd's Pie can be served warm straight from the oven. For extra flavor, add herbs like thyme or rosemary to the meat mixture. Make sure to scoop out generous portions to enjoy all the layers. If you have leftovers, store in an airtight container for up to 3 days. To reheat, warm it in the oven or microwave until heated through.
