Main Ingredients

  • 2 cups cooked rice Use day-old rice for best results.
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons vegetable oil For frying.
  • 2 eggs beaten
  • 1 cup mixed vegetables (peas, carrots, corn) Can use frozen mixes.
  • 3 tablespoons soy sauce Use gluten-free soy sauce for gluten-free version.
  • 1 tablespoon sesame oil Adds flavor.
  • to taste salt and pepper

Garnish

  • 3 green onions, sliced For garnishing.

Instructions
 

Preparation

  • Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat.
  • Add the shrimp to the pan and cook until they turn pink and opaque, about 2-3 minutes. Remove from the skillet and set aside.
  • In the same skillet, pour in the beaten eggs and scramble gently until fully cooked, about 2 minutes.
  • Add 1 cup of mixed vegetables to the skillet and cook until heated through, about 2 minutes.
  • Stir in 2 cups of cooked rice, the cooked shrimp, 3 tablespoons of soy sauce, and 1 tablespoon of sesame oil. Mix well.
  • Continue to cook for another 2-3 minutes, stirring frequently.
  • Fold in the sliced green onions and season with salt and pepper to taste.
  • Serve hot and enjoy immediately.

Notes

For best texture, use day-old rice. Adjust ingredients based on preference; add chili paste for heat or use tofu for a vegetarian version.
