  • 1 pound shrimp, peeled and deveined Make sure the shrimp is fresh for the best taste.
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder Adjust the spices to your liking; add more for extra heat.
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • 8 small corn or flour tortillas
  • 1 cup cabbage, shredded
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • Fresh cilantro for garnish
  • Lime wedges For serving.

Preparation

  • In a bowl, mix together the shrimp, olive oil, chili powder, garlic powder, salt, and pepper.

Cooking

  • Heat a skillet over medium heat and add the shrimp. Cook for about 2-3 minutes on each side until they are pink and cooked through.
  • While the shrimp is cooking, warm the tortillas in another skillet or microwave.

Assembly

  • Once the shrimp is done, assemble the tacos. Place some shrimp on each tortilla.
  • Top with shredded cabbage, diced tomatoes, and avocado slices.
  • Garnish with fresh cilantro and serve with lime wedges on the side.

Notes

Leftover shrimp can be stored in the refrigerator for up to 2 days. Keep the shrimp, tortillas, and toppings separate in airtight containers. Reheat the shrimp gently in a skillet before assembling the tacos again. For a vegetarian option, use grilled veggies or tofu. Consider marinating the shrimp for 15-30 minutes for even more flavor.
