Ingredients
  

Meat Mixture

  • 1 lb ground beef You can substitute with ground turkey or chicken.
  • 1/2 cup chopped onions Use any type of onion you prefer.
  • 1/2 cup chopped bell peppers Red, yellow, or green peppers work well.
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder Adjust for spiciness if desired.
  • Salt and pepper to taste

Burgers and Assembly

  • 1 cup shredded cheese (cheddar or Mexican blend) Experiment with different cheeses for different flavors.
  • 4 pieces flour tortillas Can substitute with gluten-free tortillas.
  • Sour cream and salsa for serving

Preparation

  • Preheat the Blackstone grill over medium heat (around 375°F).
  • In a mixing bowl, combine the ground beef with chopped onions, bell peppers, garlic powder, chili powder, salt, and pepper. Mix until fully blended and elastic in texture.
  • Form the meat mixture into burger patties about 1/2 inch thick.

Cooking

  • Place the patties on the preheated grill and cook for 3-4 minutes on each side or until fully cooked and browned. Look for juices running clear when pierced.
  • During the final minute of cooking, place cheese on top of each patty to melt. You’ll want it bubbly and gooey!

Assembly

  • To assemble the quesadillas, place one burger on a tortilla and top it with another tortilla.
  • Grill the quesadilla for about 2-3 minutes on each side, or until golden brown and crisp, flipping carefully.
  • Cut the quesadilla into wedges and serve hot with sour cream and salsa for dipping.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For freezing, wrap individual quesadilla burgers in plastic wrap and place in a freezer-safe bag for up to 1-2 months. To reheat, use the oven at 350°F to maintain crispiness.
