Preparation

  • Begin by placing the chicken breasts at the bottom of the slow cooker, ensuring they are evenly arranged.
  • In a medium bowl, combine the pineapple chunks, teriyaki sauce, sweet and sour sauce, sliced bell pepper, and onion. Stir well to mix all the flavors together.
  • Pour the sauce and vegetable mixture over the chicken breasts, ensuring they are well-coated.
  • Add salt and pepper to taste. Remember to be cautious with salt as the sauces will add flavor.

Cooking

  • Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours. The chicken should be tender and cooked through, easily shredding with a fork.

Serving

  • Once ready, fluff up your cooked rice and serve the pineapple chicken hot over it.
  • For presentation, ladle the chicken and sauce generously over the rice in deep dishes.

Notes
