  • 4 cups beef broth

  • 1 teaspoon grated ginger
  • 1 package ramen noodles

Instructions
 

Preparation

  • In a slow cooker, combine beef, beef broth, soy sauce, mirin, garlic, and ginger.
  • Cover and cook on low for 6-8 hours, or until the beef is tender.

Finishing Touches

  • Remove the beef and shred it, then return the shredded beef to the slow cooker.
  • Prepare ramen noodles according to package instructions.
  • Serve the ramen noodles in bowls, topped with the beef mixture, soft-boiled eggs, fresh greens, and crunchy vegetables.

Notes

Leftovers can be stored in an airtight container in the refrigerator for about 3-4 days. For best texture, freeze the beef mixture separately from the noodles.
