Ingredients
  

For the Chicken

  • 1 pound boneless, skinless chicken breasts
  • 3 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 medium onion, diced
  • 1/4 cup water
  • 1 Tablespoon olive oil
  • 2 Tablespoons red wine vinegar
  • 1 teaspoon oregano
  • 1/4 teaspoon allspice
  • 1 teaspoon lemon pepper

For the Tzatziki Sauce

  • 1 cup fat-free plain Greek yogurt
  • 2 cloves garlic, minced
  • 1/2 cup grated cucumber
  • 2 Tablespoons chopped fresh parsley

Preparation

  • Start by spraying the slow cooker with nonstick cooking spray.
  • Place the chicken breasts inside, ensuring they are distributed evenly.

Make the Marinade

  • In a medium bowl, mix together the minced garlic, fresh lemon juice, diced onion, water, olive oil, red wine vinegar, oregano, allspice, and lemon pepper until well combined.

Cook the Chicken

  • Pour the marinade over the chicken breasts.
  • Cover and cook on HIGH for 3-4 hours or on LOW for 6-8 hours until the chicken is tender and easily shreds with a fork.

Prepare the Tzatziki Sauce

  • While the chicken cooks, mix together the Greek yogurt, minced garlic, grated cucumber, chopped parsley, and a pinch of salt in a bowl.
  • Cover and refrigerate for at least 1 hour to allow the flavors to meld.

Shred the Chicken

  • Once cooked, use two forks to shred the chicken directly in the slow cooker, mixing it with the remaining juices for added flavor.

Serve

  • Serve the shredded chicken with warm pocketless pita bread, or as a lettuce wrap, along with sliced tomatoes, onions, cucumbers, and the prepared Tzatziki sauce on the side.

Notes

Leftovers can be stored easily in the refrigerator for up to 3 days. To reheat, microwave or warm gently on the stovetop. You can freeze the shredded chicken for up to two months. Use fresh ingredients for optimal flavor.
