Ingredients

  • 2 pounds boneless, skinless chicken thighs or breasts Thighs are juicier and add wonderful flavor.

  • 3 stalks celery, diced For that classic aromatic base; it brings a wonderful crunch and fresh taste.
  • 1 piece onion, diced The aromatic powerhouse, bringing all flavors together.
  • 4 medium potatoes, peeled and cubed These will make your stew hearty and satisfying.
  • 4 cloves garlic, minced For that deliciously uplifting aroma and flavor; it’s a must!
  • 4 cups low-sodium chicken broth Builds the base of your stew.
  • 2 tablespoons tomato paste Adds sweetness and depth.
  • 1 teaspoon dried thyme Adds earthy notes and warmth.
  • 2 pieces bay leaves Remember to remove them before serving!
  • to taste seasoning Salt and pepper Essential for flavor.
  • 1/4 cup all-purpose flour (optional, for thickening) For a thicker stew.
  • as needed garnish Fresh parsley, chopped For a pop of color.

Preparation

  • Start by heating a skillet over medium-high heat. Add a drizzle of oil and sear your chicken pieces until they are golden brown—about 5-7 minutes per side.
  • Once the chicken is seared, place it into the slow cooker along with the diced vegetables, potatoes, minced garlic, and bay leaves.
  • Sprinkle dried thyme, salt, and pepper over the top of the contents in the slow cooker. Stir to combine.
  • Gently pour in the chicken broth. If you prefer a thicker stew, whisk the 1/4 cup of flour with a small amount of broth before adding it to the pot.

Cooking

  • Cover the slow cooker and set it on low for 6–8 hours or high for 3–4 hours.
  • Once the chicken is cooked through and the veggies are tender, remove the bay leaves. Adjust seasoning as needed.

Serving

  • Ladle your stew into bowls and sprinkle fresh parsley on top before serving.

Notes

Prep ahead by dicing veggies the day before. Don't rush the searing to maximize flavor. Taste your stew during cooking to get perfect seasoning. For flavor variations, consider using turkey, tomatoes, or adding seasonal veggies.
