Ingredients
  

For the chicken

  • 4 pieces chicken breasts
  • 2 pieces lemons (juiced and zested)
  • 4 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (chopped) Use fresh for best flavor
  • 1 tablespoon fresh thyme (chopped) Use fresh for best flavor
  • Salt and pepper to taste
  • 2 cups chicken broth

For the rice

  • 2 cups rice Prepare according to package instructions

For garnish

  • Fresh parsley For garnish

Preparation

  • In the slow cooker, place the chicken breasts.
  • In a bowl, mix the lemon juice, lemon zest, garlic, rosemary, thyme, salt, and pepper. Pour this mixture over the chicken.
  • Add the chicken broth to the slow cooker.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 4 hours.
  • About 30 minutes before serving, prepare the rice according to package instructions.
  • Once the chicken is cooked, shred it in the slow cooker and mix it with the juices.

Serving

  • Serve the lemon herb chicken over fluffy rice and garnish with fresh parsley.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop.
