  • 4 pieces boneless, skinless chicken breasts You can use fresh or frozen chicken
  • 1 cup chicken broth Substitute with vegetable broth or water if needed
  • 2 pieces lemons Juiced and zested
  • 3 cloves garlic Minced
  • 1 tablespoon olive oil
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked rice Serve fluffy
  • Fresh herbs (such as parsley or basil) For garnish

Preparation

  • In a slow cooker, combine chicken breasts, chicken broth, lemon juice, lemon zest, garlic, olive oil, oregano, salt, and pepper.

Cooking

  • Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through and tender.
  • Remove chicken and shred it with two forks.
  • Return the shredded chicken to the slow cooker, stir to combine.

Serving

  • Serve the chicken over cooked rice and garnish with fresh herbs.

Notes

For extra flavor, marinate the chicken in lemon juice and spices for a few hours before cooking. If you like a thicker sauce, you can remove some of the liquid from the slow cooker and let it simmer on the stove until it reduces. Customize by adding vegetables like carrots, bell peppers, or green beans to the slow cooker, or using brown rice or quinoa instead of white rice for a healthier option.
