  • 4 pieces chicken thighs or breasts
  • 1 cup chicken broth
  • 2 pieces lemons (juice and zest)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

  • 2 cups rice
  • 4 cups water or additional chicken broth

Preparation

  • In the slow cooker, combine chicken broth, lemon juice, lemon zest, olive oil, garlic, oregano, thyme, salt, and pepper.
  • Add the chicken pieces and coat well with the mixture.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • About 30 minutes before serving, cook the rice according to package instructions using water or additional chicken broth.

Serving

  • Once the chicken is cooked through and tender, serve it over the fluffy rice, garnished with fresh parsley.

Notes

For extra flavor, marinate the chicken in the lemon mixture for a few hours before cooking. You can add more herbs like rosemary or basil for different flavors. If you like a bit of heat, you can add red pepper flakes to the mixture. To store leftovers, let the chicken and rice cool completely. Place them in an airtight container and store them in the refrigerator for up to 3 days. You can also freeze the chicken and rice for up to 2 months. Just make sure to reheat thoroughly before serving.
