  • 2 lbs pork shoulder
  • 20 oz can crushed pineapple, undrained
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon cornstarch (optional, for thickening)
  • Salt and pepper to taste

Preparation

  • Place the pork shoulder in the slow cooker.
  • In a bowl, mix together the crushed pineapple, soy sauce, brown sugar, garlic, and ginger. Pour the mixture over the pork.

Cooking

  • Cover and cook on low for 6-8 hours or until the pork is tender.
  • If a thicker sauce is desired, remove the pork, whisk in cornstarch mixed with a little water, and cook on high for an additional 15-30 minutes.
  • Shred the pork and mix it back into the sauce.

Serving

  • Serve over rice or with your favorite sides.

Notes

For extra flavor, marinate the pork in the pineapple mixture overnight before cooking. Add red pepper flakes for spice. Use fresh pineapple for a fresher taste. Leftovers can be stored in an airtight container in the fridge for up to three days or frozen for up to three months. Thaw overnight in the fridge before reheating.
