  • 2 lbs Chicken (boneless, skinless breasts or thighs)
  • 1 packet Taco seasoning (store-bought or homemade)
  • 1 can Diced tomatoes and green chiles Canned
  • 16 oz Mexican cheese dip Store-bought is simplest
  • 6 pieces Tortillas Corn or flour, your choice

Taco Toppings

  • 1 cup Shredded lettuce
  • 1 cup Salsa
  • 1 cup Sour cream

Instructions
 

Preparation

  • Start by placing the chicken in the slow cooker. Generously sprinkle taco seasoning over the chicken, ensuring it’s well coated.
  • Pour the canned diced tomatoes and green chiles over the seasoned chicken.

Cooking

  • Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through.
  • Shred the chicken directly in the slow cooker using two forks, then stir in the Mexican cheese dip until melted and creamy.

Assembly

  • Spoon the cheesy chicken mixture into warm tortillas and top them with your favorite toppings.

Notes

For storage, place leftovers in an airtight container in the refrigerator for up to 3 days. You can freeze leftovers in a freezer-safe container for 2-3 months. To reheat, thaw overnight in the fridge and warm on the stovetop.
