  • 1 whole 1 whole chicken (3-4 lbs)
  • 1 medium 1 onion, quartered
  • 4 cloves 4 cloves garlic, minced
  • 2 tablespoons 2 tablespoons olive oil
  • 1 tablespoon 1 tablespoon salt
  • 1 teaspoon 1 teaspoon black pepper
  • 1 teaspoon 1 teaspoon paprika
  • 1 teaspoon 1 teaspoon dried thyme
  • 1 teaspoon 1 teaspoon dried rosemary
  • 1 whole 1 lemon, quartered

Preparation

  • Place the onion and garlic at the bottom of the slow cooker.
  • In a small bowl, mix together the olive oil, salt, pepper, paprika, thyme, and rosemary.
  • Rub the spice mixture all over the chicken, inside and out.
  • Stuff the chicken with the lemon quarters.
  • Place the chicken in the slow cooker on top of the onions and garlic.

Cooking

  • Cook on low for 6-8 hours or on high for 4-5 hours, until the chicken is fully cooked and reaches an internal temperature of 165°F.
  • Let rest for 10-15 minutes before carving and serving.
