  • 1 lb Ground Beef (80/20 fat ratio, kept ice-cold) Use ice-cold beef for optimal juiciness.
  • 4 slices Yellow American Cheese (Deli-quality for better melt) Opt for high-quality deli-style.
  • 2 pieces Brioche Buns (Split and buttered) Butter the cut-side for toasting.
  • 1 tsp Kosher Salt For seasoning the patties.
  • 1/2 tsp Black Pepper (Coarsely ground) Freshly ground for the best flavor.
  • 2 tbsp Burger Sauce Mix of mayo, mustard, and pickle base.

Preparation

  • Keep the ground beef ice-cold for best results to maintain juiciness and achieve a crispy edge.
  • In a bowl, mix the kosher salt and coarsely ground black pepper.

Cooking

  • Preheat your skillet or griddle over medium-high heat until it reaches about 375°F.
  • Divide ground beef into two equal portions and shape into loose balls without overworking.
  • Place the meatballs in the hot pan and press down flat with a spatula, holding for 10 seconds.
  • Sprinkle seasoning on top and let cook undisturbed for 3-4 minutes until edges are crispy.
  • Flip the patties, add a slice of cheese, and cook for another 2-3 minutes to melt the cheese.
  • Toast the split brioche buns cut-side down in a separate pan until golden brown.
  • Assemble the burger by spreading burger sauce on the bottom bun, adding cheesy patties, and topping with the other bun.

Notes

For a spicy kick, add jalapeños to the beef or sriracha mayo to the burger sauce. Store leftovers in an airtight container in the refrigerator for up to 3 days.
