Ingredients
  

Turkey Wings

  • 4 pieces Turkey wings Fresh, high-quality wings are preferable.

Brining Solution

  • 1 gallon Water Use for brining.
  • 1/2 cup Salt For brining.
  • 1 tbsp Peppercorns Optional for flavoring the brine.
  • 2 tbsp Brown sugar Optional for a slightly sweet brine.

Seasoning Rub

  • 2 tbsp Paprika For a smoky flavor.
  • 1 tbsp Garlic powder For seasoning.
  • 1 tbsp Onion powder For seasoning.
  • 1/2 tsp Cayenne pepper Optional for heat.

Wood Chips

  • 2 cups Apple wood chips Recommended for mild smokiness.

Instructions
 

Preparation

  • Prepare the brining solution by combining water, salt, peppercorns, and brown sugar in a bucket.
  • Submerge the turkey wings in the brining solution and refrigerate for at least 4-6 hours or overnight.
  • After brining, rinse the wings and pat dry with paper towels.
  • Apply the seasoning rub evenly across the wings.

Smoking

  • Preheat your smoker to a temperature of 225°F to 250°F.
  • Add the apple wood chips to the smoker according to the manufacturer's instructions.
  • Place the wings on the smoker grates and smoke for 2.5 to 3 hours, until the internal temperature reaches 165°F.

Finishing Touches

  • Remove the wings from the smoker and let them rest for 10-15 minutes before serving.

Notes

Brining is essential for keeping the wings moist. You can also add spices to your brine for additional flavor. Always monitor the internal temperature with a meat thermometer.
