Ingredients
  

Macaron Shells

  • 100 g almond flour
  • 100 g powdered sugar
  • 2 large egg whites
  • 50 g granulated sugar
  • 1/4 tsp cream of tartar

Filling

  • 1/2 cup marshmallow fluff
  • 1/2 cup chocolate ganache
  • 1/4 cup crushed graham crackers

Instructions
 

Preparation

  • Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  • In a bowl, sift together the almond flour and powdered sugar.
  • In a separate bowl, whisk the egg whites until foamy. Add cream of tartar and gradually mix in the granulated sugar while whisking until stiff peaks form.
  • Gently fold the dry ingredients into the meringue mixture, being careful not to deflate it. If desired, add food coloring.
  • Pipe the batter onto the prepared baking sheets in small circles.
  • Let them rest for about 30 minutes at room temperature to form a skin.

Baking

  • Bake for 15-20 minutes. Let cool completely before removing from parchment.

Assembly

  • Spread marshmallow fluff on half the shells and chocolate ganache on the other half.
  • Sprinkle crushed graham crackers on the marshmallow and sandwich the macaron shells together.

Notes

To keep your macarons fresh, store them in an airtight container in the refrigerator. They can stay good for up to a week. If you want to keep them longer, you can freeze them. Just make sure to separate the layers with parchment paper to avoid sticking. Ensure your mixing bowls and tools are clean and free from grease before whipping the egg whites. Be patient while letting the macarons rest; this helps create the beautiful foot on the macarons. Experiment with food coloring to add a fun twist.
