Cinnamon-Sugar Topping

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a loaf pan, or line it with parchment paper.
  • In a large mixing bowl, mash the ripe bananas with a fork until smooth.
  • Add granulated sugar, brown sugar, melted butter, eggs, and vanilla extract to the mashed bananas. Stir until combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
  • Pour the batter into your prepared loaf pan, smoothing the top.
  • In a small bowl, mix together the cinnamon and granulated sugar for the topping. Sprinkle over the batter.

Baking

  • Slide the loaf pan into the oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread rest in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  • Once cooled, slice and enjoy alongside your favorite beverage!

Notes

Use spotty bananas for the sweetest flavor. Don’t overmix the batter, and check for doneness by inserting a toothpick in the center.
