Preparation

  • In a medium saucepan over medium heat, combine the sugar, butter, and heavy cream. Stir until melted and smooth, about 2-3 minutes.
  • Bring the mixture to a boil and let it cook for around 5 minutes, stirring constantly, until it turns a light golden color and bubbles around the edges.
  • Remove from heat and stir in the vanilla extract and a pinch of salt.
  • Gently fold in the pecan halves until well-coated.
  • Drop spoonfuls of the mixture onto a parchment-lined baking sheet, leaving enough space between each cluster.
  • Allow the clusters to cool completely until the caramel sets, about 30 minutes.

Notes

These clusters are best served at room temperature. Experiment with adding spices like cinnamon or cayenne for a unique flavor twist. Keep leftovers in an airtight container for up to 5 days, or freeze for up to 3 months.
