  • 1 lb smoked sausage, cut into bite-sized pieces
  • 1 large onion, chopped
  • 5-6 pieces russet potatoes, peeled and cubed (about 3/4 inch)
  • 1/2 cup water
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder (optional)
  • 3-4 tablespoons vegetable oil plus extra for sautéing

  • Heat a little vegetable oil in a large nonstick skillet over medium-high heat. Add the bite-sized pieces of smoked sausage and sauté for about 5-7 minutes until browned and crispy.
  • While the sausage is cooking, peel the russet potatoes and cut them into 3/4 inch cubes.
  • Once the sausage is browned, add the cubed potatoes and chopped onions to the skillet. Drizzle in 3-4 tablespoons of vegetable oil, followed by the water, salt, pepper, and optional garlic powder. Stir everything together.
  • When the water begins to boil, reduce the heat to medium-low and cover the skillet. Let it cook for about 10 minutes, flipping the sausage and potatoes occasionally.
  • Remove the lid, raise the heat back to medium-high, and continue cooking for another 10 minutes until the potatoes are tender and crispy. Flip gently to ensure even browning.
  • Serve immediately while hot.

Notes

For best flavor, garnish with chopped green onions or parsley. This dish pairs well with a side salad or crusty bread.
