  • 2 pounds potatoes Waxy potatoes like red or Yukon Gold are recommended.
  • 1 cup mayonnaise Can substitute with Greek yogurt for a healthier version.
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon mustard
  • 1/2 cup celery, chopped
  • 1/2 cup red onion, chopped
  • 2 pieces hard-boiled eggs, chopped
  • Salt and pepper to taste
  • Paprika for garnish

Preparation

  • Boil the potatoes in salted water until tender but firm, about 15-20 minutes. Drain and let cool.
  • In a large bowl, combine mayonnaise, apple cider vinegar, mustard, salt, and pepper.
  • Cut the cooled potatoes into cubes and add to the mixture.
  • Gently fold in celery, red onion, and hard-boiled eggs.
  • Adjust seasoning as necessary and garnish with paprika.
  • Chill in the refrigerator for at least 30 minutes before serving, or make it a day ahead for better flavor.

Notes

Southern Potato Salad is best served cold. Store any leftovers in an airtight container in the refrigerator for 3-5 days, stirring well before serving again. Variations include adding diced pickles, cubed ham, or bacon, and switching vegetables like bell peppers or carrots.
