Preparation

  • Season the boneless chicken breasts with salt, pepper, and a dash of paprika. Grill or cook on stovetop until the internal temperature reaches 165°F.
  • Allow the chicken to rest for a few minutes, then slice into bite-sized pieces.
  • In a large bowl, mix together the sliced chicken, black beans, sweet corn, chopped romaine, diced avocado, and halved cherry tomatoes.
