  • 1 breast grilled chicken, sliced
  • 1/2 cup lettuce, shredded (or spinach/kale) Feel free to customize with your choice of greens.
  • 1/4 cup diced tomatoes
  • 1/4 cup diced cucumbers
  • 1/4 cup sweet corn kernels
  • 2 tablespoons red onion, finely diced
  • 2 tablespoons creamy Southwest dressing Or your favorite dressing.
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder

Preparation

  • Warm the flour tortillas in a skillet over medium heat for about 1-2 minutes on each side until pliable and slightly golden.
  • Season the sliced grilled chicken breast with smoked paprika, garlic powder, salt, and pepper while the tortillas are warming.
  • Spread 1 tablespoon of creamy Southwest dressing onto each tortilla and layer with shredded lettuce, diced tomatoes, cucumbers, corn, and red onion.
  • Place the seasoned grilled chicken slices on top of the vegetables.
  • To wrap, fold in the sides of the tortilla and roll it tightly from one end to the other, securing with a toothpick if desired.

Notes

Serve warm, sliced in half diagonally, and consider pairing with tortilla chips and salsa or a light salad. Garnish with fresh herbs or lime juice for added flavor.
