  • 2 cups shredded or rotisserie chicken Use rotisserie chicken for convenience, or grill chicken breasts for a homemade touch.
  • 1 cup shredded cheese (cheddar or Mexican blend) Feel free to experiment with your favorite types of cheese.
  • 1 can diced green chiles
  • 1 cup diced bell peppers Optional.
  • 1/4 cup diced red onion

Dressing Ingredients

  • 1/2 cup mayonnaise For a lighter version, consider Greek yogurt in place of half the mayonnaise.
  • 1 tablespoon lime juice Adjust for taste if the salad is too dry.
  • 1 teaspoon chili powder Omit if you prefer a milder dish.
  • Salt and pepper To taste.

Preparation

  • In a large bowl, combine the shredded chicken, shredded cheese, diced green chiles, diced bell peppers (if using), and red onion. Toss gently until evenly mixed.
  • In a separate small bowl, whisk together the mayonnaise, lime juice, chili powder, salt, and pepper until it’s smooth and well combined.
  • Pour the dressing over the chicken mixture and stir until everything is coated evenly.
  • Chill in the refrigerator for at least 30 minutes before serving for the flavors to meld beautifully.

Notes

This dish is best served chilled. For an appealing presentation, consider serving it on a bed of lettuce with avocado or cilantro.
