Main Ingredients

  • 2 cups cooked chicken, shredded Can use rotisserie chicken for convenience.
  • 1 cup black beans, rinsed and drained
  • 1 cup fire-roasted corn Can use frozen corn if fresh isn't available.
  • 1 piece bell pepper, diced Any color bell pepper works.
  • 1/2 cup Greek yogurt
  • 1 tablespoon lime juice Freshly squeezed is preferred.
  • 1 teaspoon chili powder Adjust to taste.
  • 1 teaspoon cumin
  • to taste Salt and pepper Season to your preference.
  • Fresh cilantro for garnish Optional.

Preparation

  • In a large bowl, combine the shredded chicken, black beans, corn, and diced bell pepper.
  • In a separate small bowl, mix the Greek yogurt, lime juice, chili powder, cumin, salt, and pepper until well combined.
  • Pour the Greek yogurt dressing over the chicken mixture and toss to coat evenly.
  • Garnish with chopped cilantro.
  • Serve immediately or refrigerate for later.

Notes

This salad can also be served wrapped in a tortilla or over a bed of lettuce. Store in the refrigerator for up to three days.
