Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Topping

  • 1/2 cup cinnamon sugar for topping

Instructions
 

Preparation

  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, mix the milk, egg, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.

Cooking

  • Heat a non-stick skillet over medium heat and lightly grease it.
  • Pour 1/4 cup of batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface, then flip and cook until golden brown.
  • Remove from skillet and immediately sprinkle with cinnamon sugar.
  • Repeat with remaining batter.

Serving

  • Serve these pancakes warm, topped with a sprinkle of cinnamon sugar, and optionally, with fresh fruit, whipped cream, or a drizzle of chocolate or caramel sauce.

Notes

Do not overmix the batter; it’s okay if there are a few lumps. Make sure your skillet is hot enough before pouring in the batter for even cooking. Keep your pancakes warm in a low oven while making the rest of the batch.
