Ingredients

Main Ingredients

  • 1 cup cooked chicken, shredded leftover rotisserie chicken works great
  • 1/4 cup buffalo sauce adjust according to taste
  • 2 whole wheat tortillas or your preferred type
  • 1/2 cup romaine lettuce, chopped
  • 1/4 cup diced tomatoes
  • 1/4 cup shredded carrots optional for extra crunch
  • 2 tablespoons ranch or blue cheese dressing
  • to taste salt and pepper

Instructions

Cooking the Chicken

  • In a medium skillet, combine shredded chicken and buffalo sauce. Heat over medium heat, stirring occasionally, until warmed through, about 5-7 minutes.
  • Ensure the chicken is coated evenly in the sauce and slightly bubbling at the edges.

Preparing the Tortillas

  • While the chicken heats, prepare your tortillas. If you prefer lightly toasted wraps, warm them in a dry skillet over medium heat for 1-2 minutes on each side until pliable.

Assembling the Wraps

  • Once the chicken is hot, remove it from heat. Spread about 2 tablespoons of your dressing on each tortilla.
  • Layer on the chopped romaine, diced tomatoes, shredded carrots, and finally, the spicy buffalo chicken.
  • Season with salt and pepper to taste. Fold in the sides of the tortilla and roll tightly from the bottom up.
  • Slice each wrap in half diagonally and serve immediately for the best texture.

Notes

For best flavor, enjoy the wraps warm. Store leftovers tightly wrapped in plastic wrap or in an airtight container in the fridge for up to 3 days.
