  • 6 large large eggs
  • 2 tablespoons mayonnaise
  • 1 tablespoon soy sauce
  • 1 teaspoon chili garlic sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Chopped green onions or chives for garnish

Preparation

  • Place the eggs in a pot and cover them with water. Bring to a boil, then cover and remove from heat. Let sit for 10-12 minutes.
  • Transfer eggs to an ice bath to cool. Peel the eggs and slice them in half.
  • Remove the yolks and place them in a bowl. Mash with mayonnaise, soy sauce, chili garlic sauce, Dijon mustard, salt, and pepper.
  • Spoon or pipe the yolk mixture back into the egg white halves.
  • Garnish with chopped green onions or chives.
  • Serve chilled or at room temperature.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Use room temperature eggs for easier peeling. Adjust the chili garlic sauce to your spice preference. For a creamier filling, add more mayonnaise. Variations include adding avocado or diced bacon.
