Ingredients
  

Noodles

  • 8 ounces rice noodles

Aromatics

  • 2 pieces shallots, sliced
  • 5 cloves garlic, minced
  • 1/3 cup chopped scallions/green onions (white part only)
  • 1 tablespoon fresh grated ginger

Sauce

  • 1 tablespoon oil (olive or vegetable)
  • 4-5 tablespoons low sodium soy sauce or tamari
  • 1-3 tablespoons chili garlic sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon sriracha
  • 2 teaspoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1/2 teaspoon red pepper flakes (optional) Adjust for heat preference.

Instructions
 

Cooking the Noodles

  • Bring a large pot of water to a boil and cook noodles according to package instructions.

Preparing the Sauce

  • In a pot, add the shallots and garlic, sauté with the oil until browned (about 5 minutes).
  • Add the white part of the scallions and grated ginger, then sauté for an additional 2-3 minutes.
  • Add all remaining sauce ingredients to the pot and whisk together.

Combining and Serving

  • When the noodles are done cooking, combine them with the sauce and toss until well coated. Let simmer for a few minutes.
  • Taste and adjust flavors as desired, adding more spice if preferred.
  • Serve with any additional vegetables or proteins as desired and top with remaining scallions.

Notes

These noodles are best served hot. You can plate them up on their own or add sautéed vegetables like bell peppers, broccoli, or snap peas for a complete meal. Adding a squeeze of lime or lemon juice before serving can brighten the flavors.
