Main Ingredients

  • 2 packs ramen noodles
  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons gochujang (Korean chili paste) Adjust to taste for spice level.
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon chili flakes Adjust to taste for spice level.
  • 2 cups chicken broth Can substitute with vegetable broth.
  • 1/2 cup water
  • 1/4 teaspoon black pepper Adjust to taste.
  • 1 boiled egg optional, for topping Slice in half before serving.
  • 2 green onions chopped For garnish.
  • 1 tablespoon sesame seeds Optional, for garnish.

Instructions
 

Preparation

  • Heat a large pot of water on the stove to boil the ramen noodles.
  • Once the water is boiling, add the ramen noodles and cook according to the package instructions, usually about 3-4 minutes.
  • Drain the noodles and set them aside.

Cooking

  • In a large skillet or wok, heat the vegetable oil over medium heat.
  • Once the vegetable oil is hot, add the sesame oil and swirl to combine.
  • Add the minced garlic to the skillet and sauté for about 30 seconds, until fragrant.
  • Add the minced ginger to the skillet and sauté for another 30 seconds.
  • Stir in the gochujang and cook for 1-2 minutes, allowing the flavors to meld together.
  • Add the soy sauce, rice vinegar, brown sugar, and chili flakes to the skillet.
  • Stir the ingredients together until the sugar dissolves and the mixture forms a smooth sauce.
  • Slowly pour in the chicken broth while stirring continuously.
  • Add the water to the skillet and continue stirring.
  • Bring the mixture to a simmer and let it cook for 3-4 minutes.
  • Add the cooked ramen noodles into the skillet and toss them in the sauce until they are fully coated.
  • Let the noodles cook for another 2-3 minutes, absorbing the sauce.
  • Taste and adjust the seasoning with black pepper, adding more if desired.
  • If you are using a boiled egg, peel and slice it in half.
  • Serve the ramen in bowls, topping each with the sliced boiled egg (if using), chopped green onions, and sesame seeds.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, add a little water or broth in a pot over low heat and stir until warmed through.
