Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, cream together the softened butter and sugar until light and fluffy.
  • Beat in the egg and vanilla extract.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients.
  • Mix in green food coloring until you reach your desired shade.

Baking

  • Drop rounded tablespoons of dough onto baking sheets lined with parchment paper.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Let cool before decorating with sprinkles or icing.

Notes

Be careful not to overmix the dough to keep the cookies soft. You can chill the dough for 30 minutes before baking to help the cookies keep their shape.
