Ingredients
  

For the mixture

  • 4 cups Chex Rice Cereal
  • 1 cup green candy melts
  • 1/4 cup peanut butter
  • 1/2 tbsp vegetable or canola oil
  • 3/4 to 1 cup powdered sugar Adjust based on desired sweetness

For the decorations

  • 1/4 cup M&M's
  • 1/4 cup Shamrock Sprinkles
  • 1/4 cup Shamrock Marshmallows

Preparation

  • In a microwave-safe bowl, combine the green candy melts, peanut butter, and vegetable or canola oil.
  • Microwave on HIGH for 30 seconds. Stir and continue to microwave in 15-second intervals until the mixture is smooth.
  • Pour the Chex Rice Cereal into the bowl and mix until it is well coated with the candy mixture.
  • Open a gallon-size zip-lock bag and pour in the cereal mixture. Seal the bag and add in the powdered sugar. Shake the bag until the cereal is well coated.
  • Pour the coated cereal onto parchment or wax paper and allow it to set.
  • Once set, add the M&M's, shamrock sprinkles, and shamrock marshmallows, then stir everything together.

Serving

  • To serve, place St. Patrick's Day Lucky Chow in a festive bowl or on a platter.
  • You can share it during a party or pack it in treat bags for guests to take home.

Notes

Store in an airtight container for up to a week. Keep in a cool, dry place to maintain its crunchiness. You can adjust the sweetness by varying the powdered sugar amount and consider using dark chocolate for a healthier option.
