Preparing the Cheesecake

Stacking and Decorating

  • Level the tops of the cheesecakes with a serrated knife, if necessary.
  • Place the first cheesecake layer on a cake board.
  • Insert dowels into the first cheesecake for support, trimming them to the height of the cheesecake.
  • Place the second cheesecake layer on top, adjusting for alignment.
  • Repeat the process with additional layers, if desired.
  • Decorate the top layer with fresh fruit, whipped cream, and drizzle chocolate ganache as desired.

Notes

Practice makes perfect! If you're new to stacking, try practicing with dummy cakes or less precious cheesecakes first. Remember to keep everything cool during preparation.
