Bread Ingredients

  • 2 cups pancake mix Use your favorite pancake mix.
  • 1 cup ripe bananas, mashed Make sure the bananas are very ripe for more sweetness.
  • 1 cup strawberries, chopped Chop into small pieces for even distribution.
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Glaze Ingredients

  • 1 cup powdered sugar For the glaze.
  • 2 tablespoons milk For the glaze.
  • 1/4 teaspoon vanilla extract For the glaze.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a large mixing bowl, combine the pancake mix and sugar.
  • In another bowl, mix the mashed bananas, chopped strawberries, milk, vegetable oil, eggs, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Pour the batter into the greased loaf pan and smooth the top.

Baking

  • Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  • While the bread is baking, prepare the strawberry glaze by mixing the powdered sugar, milk, and vanilla extract in a bowl until smooth.
  • Once the bread is done, allow it to cool for a few minutes before removing it from the pan.
  • Drizzle the strawberry glaze over the warm bread before serving.

Notes

Store wrapped tightly in plastic wrap or aluminum foil at room temperature for up to 3 days. Refrigerate for about a week or freeze for up to 3 months. Ensure it's cooled completely before storing. You can add nuts or chocolate chips for extra flavor and texture.
