Ingredients
  

Main Ingredients

  • 1 tablespoon olive oil
  • 2 pieces boneless, skinless chicken breasts
  • ½ teaspoon sea salt
  • ¼ cup strawberry jam
  • 1 tablespoon balsamic vinegar good quality
  • 1 tablespoon water extra if mixture is too thick
  • ¼ cup fresh basil leaves cut into ribbons or finely chopped
  • 2 tablespoons crumbled goat cheese optional
  • ¼ cup fresh strawberries sliced, optional

Instructions
 

Cooking Chicken

  • Heat olive oil in a medium skillet over medium-high heat.
  • Season chicken breasts with a sprinkle of salt on both sides and place in the pan. Cook for about 4-5 minutes on one side or until a nice golden crust forms.
  • Flip chicken and cook for another 4-5 minutes or until fully cooked through.

Making the Sauce

  • Meanwhile, whisk together strawberry jam, balsamic vinegar, and water in a small bowl.
  • When chicken is almost finished cooking, pour the sauce mixture over the chicken, scraping up brown bits from the bottom of the pan.
  • Reduce heat and bring sauce to a simmer, let it bubble for 2-3 minutes or until it has reduced and thickened.
  • Stir in most of the basil and simmer for 1 minute.

Serving

  • Remove chicken breasts from the pan and pour the sauce over them.
  • Sprinkle with goat cheese if desired, and garnish with remaining basil and sliced strawberries.

Notes

Serve Strawberry Chicken with rice, quinoa, or a fresh salad. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
