Ingredients
  

Cookie Base

  • 15.25 oz strawberry cake mix
  • 1 tsp baking powder
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1/2 tsp pure vanilla extract
  • 1 cup white chocolate chips Can substitute with semi-sweet or dark chocolate chips.

Preparation

  • Preheat your oven to 350 degrees F. Line 2 large baking sheets with parchment paper and set aside.
  • In a large bowl, combine the cake mix and baking powder until well blended.
  • In a separate smaller bowl, whisk together the eggs, oil, and vanilla by hand.
  • Pour the egg mixture into the bowl with the cake mix and stir with a spoon until a dough forms.
  • Mix in the white chocolate chips until evenly distributed.

Baking

  • Using a small portion scoop, drop rounded balls of dough onto your prepared baking sheet, leaving space between each cookie.
  • Bake for 9-10 minutes. Do not let them brown in the oven; they should look slightly undercooked.
  • Allow the cookies to cool on the baking sheet for at least 10 minutes.

Notes

Serve warm or at room temperature with milk or vanilla ice cream. Garnish with extra chocolate chips or fresh strawberries for an added touch. Store in an airtight container at room temperature for 3-4 days, refrigerate for up to a week, or freeze for up to three months.
