Strawberry Mousse Ingredients

  • 2 cups fresh strawberries, hulled and sliced Use ripe strawberries for the best flavor.
  • 1/2 cup granulated sugar Adjust the sugar to your taste for a sweeter mousse.
  • 1 teaspoon lemon juice
  • 1 cup heavy cream Make sure the heavy cream is chilled for better whipping.
  • 1 teaspoon vanilla extract
  • 1 packet unflavored gelatin (about 2 teaspoons)
  • 3 tablespoons cold water

Preparation

  • In a blender or food processor, puree the strawberries until smooth. Add sugar and lemon juice, and blend until combined.
  • In a small bowl, sprinkle the gelatin over the cold water and let it sit for 5 minutes until it blooms.
  • Heat the gelatin mixture gently until the gelatin is dissolved, then combine it with the strawberry puree.
  • In a separate bowl, whip the heavy cream with vanilla extract until soft peaks form.
  • Gently fold the strawberry mixture into the whipped cream until fully combined.
  • Spoon the mousse into serving dishes and refrigerate for at least 2 hours until set.

Serving

  • Serve chilled, optionally garnished with additional strawberries or a sprig of mint.

Notes

If storing leftovers, keep the mousse covered in the refrigerator for 2-3 days but enjoy within 24 hours for the best texture and flavor. You can also switch fruits or add melted chocolate for variation.
