Ingredients
  

For the Mousse

  • 2 cups fresh strawberries, hulled Use ripe strawberries for best flavor.
  • 1/2 cup granulated sugar
  • 1 cup heavy cream Ensure to stop whipping once soft peaks form.
  • 1 teaspoon vanilla extract
  • 1 packet unflavored gelatin (1/4 oz) Can substitute with agar-agar for a vegetarian option.
  • 2 tablespoons cold water Used to bloom the gelatin.

Preparation

  • In a blender or food processor, combine the hulled strawberries with granulated sugar. Blend until smooth. Strain the puree through a fine mesh sieve for a seedless texture if preferred.
  • In a small bowl, sprinkle the unflavored gelatin over the cold water and let it sit for 5 minutes until it blooms. Gently heat the mixture until the gelatin is completely dissolved.
  • Pour the dissolved gelatin into the strawberry puree. Stir well until fully combined.
  • In a separate bowl, whip the heavy cream along with the vanilla extract until soft peaks form.
  • Carefully fold the strawberry mixture into the whipped cream using a large spatula.
  • Spoon the mixture into serving dishes and refrigerate for at least 2 hours until the mousse sets.

Notes

Serve chilled in elegant dessert glasses and garnish with fresh strawberries or whipped cream. Can be made a day in advance and stored in the refrigerator.
