Ingredients
  

For the Strawberry Layer

  • 1 cup frozen sliced strawberries
  • 1 ounce white rum
  • ½ cup pineapple juice

For the Pineapple Coconut Layer

  • 1 cup frozen pineapple chunks
  • 1 ounce white rum
  • ¼ cup pineapple juice
  • ¼ cup cream of coconut Found in the cocktail mixer aisle.

Garnishes

  • 2 pieces pineapple wedges For garnish
  • 2 pieces fresh strawberries For garnish

Preparation

  • In a blender, combine the frozen sliced strawberries, 1 ounce of white rum, and ½ cup of pineapple juice. Blend until smooth to create the strawberry layer.
  • Pour this mixture into the bottom of two glasses.
  • Clean out the blender to avoid mixing flavors.
  • Add the frozen pineapple chunks, another ounce of white rum, ¼ cup of pineapple juice, and ¼ cup of cream of coconut into the blender. Blend until smooth to make the pineapple coconut layer.
  • Gently pour or spoon this second layer over the strawberry layer in both glasses carefully.
  • Garnish with pineapple wedges and fresh strawberries if desired.

Notes

For a non-alcoholic version, omit the rum and increase the amount of pineapple juice. Use cold ingredients for a thicker, frostier drink. Store leftovers in an airtight container for up to 2 days.
